1 1/2 C. Peanut Butter (the crunchier the better)
1/2 C. Packed Brown Sugar
1 Large egg white
(For long-lasting soft cookie experience: add apple sauce and a little oatmeal) And/Or (Add chocolate chips if you are a superior human)
Mix all ingredients in a medium mixing bowl. Roll dough into 1 inch balls and place 1 inch apart on a greased cookie sheet (or use parchment paper). If you have no chocolate chips, or do this with half of the dough, lightly push finger into the ball of dough and make a small crater. Fill the crater with jam.
Bake at 350 degrees F for 12-15 minutes. Cool on rack. Yields ~2 dozen cookies
